Useful and beautiful, this well made kitchen tool will help you chop your way to another perfect chili, apple pie or chicken fricassee. If your idea of cooking is taking a frozen puck out of the freezer and popping it in the micro for 6 minutes on high, well, this will make an awesome gift for any chefs in your life. The chef’s cutting board is constructed from three pieces of wood; the two foot bars and the chopping surface, which was a single piece of wood until we bookmatched it and glued it back together to form the top. This tool has four rubber feet to keep it stable on your work surface and it is elevated so that a plate or shallow bowl may be slid under to receive your perfectly diced onions. These are at least 14 inches wide and 20 inches long, they are a quarter of in inch thick on the edge and three quarters of an inch thick in the middle.
While discussing the design of this cutting board with a customer at a farmers market we have
been participating in, I came to the realization that the steps that it took to arrive where we are now are not as obvious as I thought.
Many years ago, as a young wood worker, I made a couple of cutting boards for our own use, these were very basic, flat on top, a narrow edge for gripping and the body was 3/4 of an inch thick. They did, and in fact, still do work fine, except they move around while chopping, the simple solution, add some rubber feet. Well that leads to a lack of support, the four corners up and the middle unsupported. Possibly, the board could break along the grain, during the especially vigorous mashing of a clove of garlic not to mention the splitting of a chicken breast with a cleaver. So, this lead to strengthening the board across the grain, but wait, if a bar is dovetailed into the bottom of the board then the feet can go into that piece of wood, the dove tail allows for wood movement as the foot bar is only secured in the middle. Then it was fairly simple to work in an offset so that the actual foot pad was as far to the outside perimeter of the chopping surface as possible. Now we had something, and the fact that there was a space under the board where a plate or bowl could sit was entirely serendipitous.
